The exhibition Cómo Bailan los Caballos Andaluces is an authentic equestrian ballet with purely Spanish music and 18th century costumes, set to choreographies taken from the reprisses of classical and cowboy dressage and other traditional equestrian works. Each performance consists of 6 to 8 choreographies.

Description
The Royal Andalusian School of Equestrian Art Foundation, based in Jerez de la Frontera, is known worldwide for its exhibition "How the Andalusian Horses Dance", a unique show that displays and summarises, in an apparently natural way, all the work carried out by this institution since its foundation. In May 1973, in Jerez de la Frontera, His Majesty King Juan Carlos I, Prince of Spain, presented Mr. Álvaro Domecq Romero with the "Caballo de Oro", the highest equestrian award given annually in Spain in recognition of the dedication and work carried out in favour of the world of the horse. On this occasion, Álvaro Domecq presented for the first time his show "Cómo bailan los caballos andaluces" (How the Andalusian horses dance), from which the foundation of what is nowadays the Entity began, during the first stage, the School was developed under the personal management of its creator. Later, the Ministry of Information and Tourism decided to take it over, buying the "Recreo de las Cadenas" from the Duke of Abrantes. In 1982, the Ministry handed over responsibility for the management of the School to a Board of Trustees, under the aegis of the Diputación Provincial de Cádiz, thus boosting its national and international relaunch, and in 1983 the Board of Trustees signed the purchase of the School. Its creator and founder, Mr. Álvaro Domecq Romero, obtained the post of Technical Director through a public competition. Since 1986, the Board of Trustees has exceeded the most optimistic objectives, finding and providing the Institution with the necessary economic, human and technical resources. It was in this same year that the School acquired the stables of D. Pedro Domecq de la Riva, consisting of thirty-five Spanish horses and a colourful collection of nineteen draught carriages with the corresponding harnesses, some of which date back to 1730, as well as saddles and embroidery for horses and coachmen, all pieces of incalculable historical value. In June 1987, His Majesty the King received the members of the Board of Trustees in a special audience at the Zarzuela Palace, accepting the Honorary Presidency and granting the Entity the title of "Royal School". On 15th October of the same year, Their Majesties Their Majesties the King and Queen of Spain received the members of the Board of Trustees in a special audience at the Zarzuela Palace, accepting the Honorary Presidency and bestowing on the Entity the name of "Royal School". MM. Their Majesties King Juan Carlos and Queen Sofía presided over the inaugural ceremonies of the Royal School from the Palco de Honor of the riding school.In July 2003, the former Royal School Board of Trustees was transformed into a Foundation, thus obtaining a solid legal personality and being able to accept private contributions for its development. Although the show "How the Andalusian Horses Dance" is, in external terms, the maximum exponent of the work carried out at the School, there are other aspects that are as important or even more so for the Entity. Among them we would highlight the cultural and social vehicle of the Equestrian Heritage; the selection of horses for promotion, the training of High School riders, the conservation and promotion of Classical and Doma Vaquera; the preservation of the prestige of our riding, our breed of Spanish horses, our traditions and our culture; and with its show, being hosts of the province of Cadiz and ambassadors of Spain abroad, making annual tours to different countries.
